Course description

Prerequisite: Wildlife zoology

Responsible teacher: Dr. Miklós Marosán

This subject is aimed to teach the main knowledge about the food hygiene questions of the game meat, including the rules of the game meat as human food production and management.Special attention is given to the possibilities of the potentially quality damaging factors, including the ways of prevention.

1.  Rules of wild-game hunting and shooted game. Meat handling and management on field (3h)

2. Cooling regulations, quality control until the processing plant (3h)

3. Small-game meat processing rules, hygiene issues (4h)

4. Big-game meat processing rules, hygiene issues (4h)

5. Ensure food hygiene condition of game meat based food in the retail and wholesale (5h)

6. Exploration possibility of game meat (like human food) abuse (1h)
