The food chain is part of the critical infrastructures, therefore its safety is monitored by legislation
and public authorities in all countries. Still, due to its complexity problems are common, resulting
in human illness, animal and plant epidemics and tremendous economic losses. However, risks
can often be avoided and reduced through the appropriate flow of information. This course will
provide a detailed look at the approaches, techniques and tools available to public authorities and
companies to predict and manage crisis situations. The knowledge and skills acquired in this
course are generalisable and therefore relevant not only for those who wish to work in the field of
food chain control, but also for those who see their future in clinical areas or research and
