Introduction
Lívia Darnay PhD was born in Budapest, graduated as Food Engineer (MSc.) at Food Science Faculty of Corvinus University of Budapest in 2009. She started her doctorial research in 2011, which topic was: Application of microbial transglutaminase for dairy and meat products. She received her PhD degree for Food Science in 2017. She is working at Department of Food Hygiene at University of Veterinary Medicine Budapest since 2017. She is lecturer and practice leader of Food Hygiene (2 semesters coarse). Besides her educational duties, she is the Head of Food Technology Laboratory, where she is doing research work in different animal source foods, with a focus on dairy products.
Main research areas:
- Food safety and food quality issues of fermented dairy products and rennet coagulated cheese made of different milk origin (cow, goat, donkey, buffalo, camel)
- Development of vegan based products, meat analoges
- Role of microbial transglutaminase in texture enhancement and production of biogenic amines
