Summary:
WHEATBIOME aims to investigate the role of the wheat microbiome in more sustainable food processing. The soil-plant microbiome will be studied in case studies and tested in the lab to see how it affects the quality of wheat and how wheat affects the human microbiome. Based on the results, a new decision support system and new food and feed products are being developed, and options for reducing food waste will also be established.
